Ingredients

  • 2 slices of whole-grain bread
  • 1 ripe avocado, sliced
  • 2 soft-boiled eggs
  • 2 tablespoons pine nuts, toasted
  • Salt and pepper to taste

Steps

  1. Toast the slices of whole-grain bread until they reach your desired level of crispiness.
  2. While the bread is toasting, prepare the soft-boiled eggs. Bring a pot of water to a boil, gently add the eggs, and boil for about 6-7 minutes. Then, immediately transfer the eggs to an ice water bath to stop the cooking process. Once cooled, peel the eggs and slice them in half.
  3. Spread the sliced avocado evenly on top of the toasted bread slices.
  4. Place the soft-boiled egg halves on the avocado. Season with salt and pepper to taste.
  5. Sprinkle the toasted pine nuts over the eggs and avocado.
  6. Serve immediately.
