Ingredients

  • 1 lb sliced mushrooms
  • 1 medium chopped onion
  • 2 minced cloves garlic
  • 4 tablespoons unsalted butter
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Steps

  1. Add butter to a In a large pot, add the chopped onion and sauté for 4 minutes.
  2. Stir in the garlic and cook for another minute.
  3. Add the mushrooms and thyme, and cook for 7 minutes.
  4. Season with salt and pepper.
  5. Pour in the broth and bring the soup to a boil.
  6. Simmer for 20 minutes.
  7. Blend the soup until it’s smooth and creamy.
  8. Return the blended soup to the pot and stir in the heavy cream. Heat it for 4 minutes.
  9. Taste and adjust the seasoning with additional salt and pepper if needed.
  10. Enjoy!
