Kale and Walnut Gnocchi

A Delicious Italian-Inspired Meal: Soft Gnocchi, Sautéed Kale, and Toasted Walnuts. This dish is perfect for a cozy night in with loved ones or even a quick and easy weeknight dinner.

Makes 4 Servings

Ingredients

  • 1 lb gnocchi
  • 4 cups kale leaves, stems removed and chopped
  • 1/2 cup chopped walnuts
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Sauté the minced garlic until it becomes fragrant.
  4. Stir in the chopped kale and sauté for 5 minutes.
  5. Add the cooked gnocchi to the skillet and gently toss with the sautéed kale.
  6. In a separate small pan, toast the chopped walnuts for 2 minutes. Do not to burn them.
  7. Sprinkle the toasted walnuts over the gnocchi and kale mixture.
  8. Season with salt and pepper.
  9. Sprinkle with grated Parmesan cheese if using.
  10. Enjoy!
