Looking for a healthy, keto-friendly breakfast that’s easy to prepare? These keto friendly easy to make egg muffins are high-protein, low-fat and low-carb . Perfect for those hectic mornings, or as a meal prep alternative, they make for a great grab-and-go option.

Makes 12 Servings

Ingredients

  • 12 eggs
  • 1/4 cup heavy cream
  • Salt and pepper, to taste
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped spinach
  • 1/4 cup diced ham

Steps

  1. Preheat oven to 350°F (180°C) and spray a 12-cup muffin tin with cooking spray.
  2. In a large bowl, whisk together eggs, cream, salt and pepper.
  3. Divide cheese, spinach and ham evenly among the muffin cups.
  4. Pour the egg mixture over the fillings, filling each cup about 3/4 full.
  5. Bake for 18 to 20 minutes or until eggs are set.
