Ingredients

  • 1 cup red lentils
  • 1 can of coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder, or to taste
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps

  1. In a large pot, sauté the chopped onion and minced garlic until they become translucent.
  2. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the onion and garlic.
  3. Pour in the red lentils and coconut milk. Add water if needed to achieve your desired consistency.
  4. Bring the mixture to a simmer and let it cook for about 20-25 minutes or until the lentils are soft.
  5. Season with salt and pepper to taste.
  6. Garnish with cilantro and enjoy.
