Makes 1 Serving

Ingredients

  • 1/2 cup rolled oats
  • 1 cup vegetable broth, or water
  • 1 cup sliced mushrooms
  • 1 cup fresh spinach
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil

Steps

  1. In a saucepan, heat a splash of olive oil over medium heat.
  2. Add the diced onions and sauté for 3 minutes.
  3. Stir in the minced garlic and sliced mushrooms. Sauté until the mushrooms become tender, or for 6 minutes.
  4. Add the rolled oats. Cook for another 3 minutes, stirring occasionally.
  5. Pour in the vegetable broth or water and simmer covered over low heat.
  6. Cook for 10-12 minutes, stirring occasionally.
  7. When the oatmeal is almost ready, add the spinach and stir until it wilts.
  8. Season with salt and pepper.
  9. Enjoy Hot!
