A delightful and nutritious egg roll filled with a medley of fresh vegetables.This Veggie Egg Roll is a great way to enjoy a delicious and protein-rich snack or light meal with the goodness of fresh vegetables.

Makes 1 Serving

Ingredients

  • 2 eggs
  • 1/4 cup shredded carrots
  • 1/4 cup thinly sliced bell peppers
  • 1/4 cup thinly sliced cabbage
  • 5 fresh spinach leaves
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking oil

Steps

  1. In a bowl, combine the eggs , garlic powder, salt, and pepper, and mix well.
  2. Heat a non-stick skillet over medium heat and add a bit of cooking oil to coat the bottom.
  3. Pour half of the beaten egg mixture into the skillet, swirling to create a thin omelette. Cook for 2-3 minutes until set.
  4. Transfer the omelette to a plate and set it aside.
  5. In the same skillet, add a little more oil and stir-fry the shredded carrots, sliced bell peppers, and thinly sliced cabbage for about 3-4 minutes or until they start to soften.
  6. Add the spinach leaves, and stir-fry for another 2 minutes.
  7. Lay the cooked omelette flat on a clean surface.
  8. Place the stir-fried vegetable mixture on one end of the omelette.
  9. Roll the omelette, tucking in the sides to create a tight roll.
  10. Slice it into bite-sized pieces and serve.
