Ingredients

  • 2 cups cooked brown rice
  • 2 tbsp vegetable oil
  • 1 small zucchini
  • 2 celery stalks
  • 2 eggs
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • Green onions for garnish (optional)

Steps

  1. Sauté zucchini and celery. Set aside.
  2. Stir in rice, soy sauce, sesame oil.
  3. Season with salt and pepper.
  4. Add the rice until heated through.
  5. Poach the eggs.
  6. Serve rice topped with the poached eggs, celery, and garnish with zucchini slices, and green onions.
